Are you familiar with red corn? These corn varieties contain a pigment called xx that has antioxidant properties. The corn is not only a beautiful red hue, it is also good for you. However, most consumers have never heard of it. That is why the business contacted La Cité to develop a research partnership aimed at discovering culinary applications for the corn and making it better known. After discussion between representatives from the company and professors in the College’s Culinary Arts program, it was decided to develop a multi-use pancake mix. Work is underway in La Cité’s kitchens and various products have been presented to the clients, who have been very happy with the results so far.
